Hmmm! Scones That Love You Back

Chef vs. Baker

Which are you? Pinch of “this,” and a dash of “that”?  Or, “one level cup of sifted flour”? Chef or baker?

It’s just that I’m more of the chef type; but sharing recipes requires more refined explanations of measurements for predictable outcomes. Thus, MANY batches of scones have been prepared, photographed, recorded … and eaten. *burp*

Pardon me!

I know, I know. Tough job but somebody has to do it.

Foodtalk4you has been ever so quiet lately due to my caregiving ministrations, which are always a priority. Thank you for your patience and understanding concerning my unpredictability. My dear husband continues to be under hospice care and my care at home. Still confined to bed, his uncomplaining and appreciative attitude is sprinkled with humor, insight, and love.

The kitchen “laboratory” however, has seen a lot of activity as I tried to optimize my favorite scone recipe to give you consistently wonderful results.

With a Valentine’s Day post in mind, I kept making these little darlings in heart shapes. Needless to say, I missed that deadline; but a heart-shaped scone is so precious any time of year! A good way to say, “I love you!” don’t you think?

You can make the typical scone shape which is achieved by rolling the dough into a circle, slicing into wedges, separating the wedges, and baking.

The heart-shaped scones require a bit more effort using a cookie cutter; and can be problematic if the walnuts are not finely chopped. A secret method? I ended up actually filling the heart shape, pressing the dough down to reach the edges and height of the cookie cutter exactly. Consistent results and portion control.

Long time readers of Foodtalk4you and Toolkit for Wellness know that, just because a recipe is gluten-free, does not make it healthy. I am always trying to pack in extra good-for-you ingredients and to dial back added sugars. This recipe for scones that love you back does that with:

Quinoa Flakes- a rare source of plant-based essential amino acids. Those are the amino acids our body does not make by itself, thus we must get them from our diet. Amino acids are the “building blocks” of proteins. Just 1/3 cup of quinoa flakes contains 4 grams of protein.

Collagen Hydrolysate – unlike gelatin, this powder does not congeal. It is a power house of satisfying, satiating, healing protein that is packed with 20 amino acids! Two rounded tablespoons of collagen hydrolysate yields 11 grams of protein.

Walnuts- a great source of plant-based Omega-3 fatty acids, antioxidants, and an amino acid l-arginine which is heart healthy. Walnuts have been shown to help with brain function, suppression of tumor growth, weight control through increased satiety, as well as improved blood sugar levels. Experts say that even a quarter of a cup of walnuts a day can positively impact our health.

Regarding all nuts: Please buy raw, organic nuts for maximum benefit. But wait! You’re not done! Remember to soak your raw walnuts overnight in salted water; rinse and drain; then dehydrate at a low temperature (110-118 degrees) until light and crispy. The results are crunchy and much more digestible. Another plus to this recipe is it requires a minimal number preparation tools and little clean up. Check out my new cool stirring device.

Instead of using a floured surface to roll out the dough, I just use the same parchment paper sheet used for the baking. Easy-peasy clean up!

So, that’s the back ground material on “Scones that love you back.” Let’s get to the recipe.

SCONES THAT LOVE YOU BACK

Dry Ingredients

  • 1 cup Quinoa Flakes (I use Ancient Harvest brand)
  • 1 cup almond flour
  • ¼ cup collagen hydrolysate (I use Great Lakes brand)
  • 3 Tablespoons coconut sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum
  • ½ teaspoon salt
  • Rind of one orange, zested
  • ¼ dried cranberries, chopped
  • ¾ cup walnuts, chopped
  • Have on stand-by: 1 or more Tablespoons of ground flax seed if dough is too wet

Wet Ingredients

  • ¼ cup butter, melted (I use Kerrygold brand – from “happy” grass fed Irish cows)
  • 1/3 cup orange juice with pulp
  • 1 egg, beaten

Glaze

  • 1 egg, beaten

Optional

  • Turbinado Raw Cane Sugar Crystals to sprinkle on top before baking

Method

Put all dry ingredients into a mixing bowl and stir well to combine.

Add wet ingredients, stirring well to combine and create dough. If the dough seems too wet or sticky to a light touch of finger tips, add one tablespoon of ground flax, stirring well. Flax absorbs moisture. Wait a minute to test dough again before adding another tablespoon of it, if needed.

Turn dough out onto a parchment paper covered baking sheet. Form into a smooth ball and press down to a circle with ½ inch thickness.

For traditional scones: cut into 8 wedges using a knife or pizza cutter; separate slices on baking sheet; follow baking instructions.

For heart-shaped scones: use a cookie cutter to press out shapes, reforming scrap dough into another ½ thick layer until all dough is used. OR use my secret method of filling each heart-shaped scone, hand pressing the dough into the shape, and level with the top of the cutter. Separate scones on baking sheet.

Apply egg wash using a brush.

Sprinkle just a dab of Turbinado crystals on top of each scone, if desired. It looks nice but is not intended to become a sugar-bomb coating.

Bake at 350 degrees for 15-20 minutes. My heart-shaped 2 ½ inch across scones take 18 minutes. Scones should be golden brown when done.

Cool on wire rack.

Three – Two – One …….. Blast Off!!

Happy 2017!

If we’ve learned anything from 2016, it has to be that life can often seem very short. While long-term goals are necessary for keeping your life moving forward and staying on track, remember,  today is a beautiful day to be day one!

So if you are on your 100th consecutive day of doing something good for yourself; or, if it’s day one again – today is all we have anyway. Right?

So let’s blast off each day with a little something that is yummy, delicious, and easy to do. This is also excellent for your energy levels, clarity, and focus – AND – is full of anti-oxidants and anti-inflammation elements which will soothe your insides.

What am I talking about? Power coffee you make yourself with a few basic ingredients!

It even looks like a latte! What could be better?

I tried something similar last year, but stopped because I was using a blender which cooled off my coffee and because…well…I could do without it.

This week, however, I came across a better idea for energizing coffee. Switching out my big blender with my immersion blender has enabled me to keep my coffee hot, blitz any leftovers quite easily, and make clean-up a cinch.

After experimenting the first time with a single cup of this amazing blend, I assembled enough ingredients for a week. The following is the basic recipe for one serving. To make ahead, simply multiply the recipe’s dry ingredients, mix, store in a jar, and add a spoonful to coffee along with the teaspoon of coconut oil for each day.

POWER COFFEE

Into your morning cup of coffee add:

1 tsp coconut oil

¼ tsp. turmeric

Trace amount of cayenne pepper

¼ tsp cinnamon

½ tsp raw cacao

½ tsp collagen

¼ tsp nutmeg

A sprinkle of cardamom

½-1 tsp coconut sugar

Blitz this in a blender or use an immersion blender.

ALERT: Immersion blenders do create a bit of a splash. Do NOT use your coffee cup as a blending bowl. Red face…been there, done that…cleaned it up. What I have discovered is to blend it in the coffee pot IF it is half full. K-cup folks can just use a standard blender; just preheat the blender jar with a bit of hot water first.

What I have discovered about Power Coffee is that I am not ‘charged up’ in a jittery way. I am focused. There is no need to ‘dig deep’ to get out of my chair to start the day’s activities. I am experiencing very stable energy levels and my ‘drive’ lasts and lasts. This is all on coffee that is 50% decaf.

Three days in and I am so pleased! There are calories in this, so I either delay breakfast or decrease the amount I eat. Because I am being well-nourished with this long-lasting drink, my eating has automatically decreased.

Will this do my body good? Yes!

Here is a little information on some of the ingredients:

Coconut oil is special in the category of saturated fats. In addition to being a superb source of energy, coconut oil consists of medium-chain fatty acids which have been shown to be anti-inflammatory and protective to the immune system. Coconut oil is linked to being protective from degenerative diseases such as Alzheimer’s. The bacteria-killing property of coconut is well established. The breakdown of coconut oil in the body also leads to more efficient metabolism.

Turmeric, also known as curcumin, is an ancient healing ingredient with amazing anti-inflammatory properties. Studies show, turmeric is protective against forming the precursors of Alzheimer’s. Its anti-inflammatory properties are shown to relieve symptoms of arthritis, and it is protective against cancer.

Cinnamon helps regulate blood sugar, is loaded with anti-oxidants, calms inflammation, and is linked to brain health.

Raw cacao powder is NOT cocoa powder. Cocoa powder has milk, sugar, and other additives. Raw cacao is simply dried and ground cacao beans.

Raw cacao beans were called ‘food for the gods’ in ancient cultures due to their great benefits. Cacao beans are a rich source of anti-oxidants, fiber – both soluble and insoluble, carbohydrates, protein, monounsaturated fatty acids that are not harmful to cholesterol levels, some amounts of caffeine and theobromine that are stimulants and anti-depressants, and a host of minerals and vitamins.

Raw cacao powder is made without heating the cacao beans above 116 degrees. Then they are cold pressed to make a paste. The paste is cold ground to yield a raw cacao powder. Thanks to the cold processing, the anti-oxidants and other nutrients are not destroyed.

Collagen is essential for hair, skin, nail, joint, and bone health and is a source of protein. Got creaky joints? Got wrinkles? Get collagen!

Santa’s Waist Trimmer – “Taking Off the Cookies” – Cookies

Here are 3 important rules to remember: Eat like a king at breakfast, a prince at lunch, and a pauper at dinner. Sure, right? But sometimes, I just want a little something to go along with my coffee, you know? Not a big meal, but something that will tide me over until my first meal. Too many thoughts of “dunkable” donuts, delectable Danishes, or any variety of “healthy” whole-grain, pop-up toaster tarts come to mind.

Yuck. I want to “do my body good.”

Behold, the Breakfast Cookie!

I never want to be without a stash of these. So, every month or so, I’ll “whomp” up a double batch of these babies to freeze. Exactly 11 of these little miracles stack up perfectly along the bottom of a one-gallon Zip-lock bag, which can conveniently be wrapped around the “tube” of cookies and placed in the freezer for future reference.

The Breakfast Cookie recipe is featured in my book, Toolkit for Wellness.  After having made many, many batches of these (meaning: a LOT), I have honed this recipe to just a couple of steps – so to speak – and have streamlined the work, taking any of the guess work out of the nut flour proportions.

So, here we go!

I’ve simplified the prep into ‘wet’ and ‘dry.’  I also assemble ALL ingredients before starting, which is especially important if you are making a double batch. I will, literally, surround each bowl of dry ingredients with smaller bowls of wet ingredients and the requisite three bananas, each before starting.

BREAKFAST COOKIES

Preheat oven to 350, or 325 if using convection. Both of my large baking sheets fit nicely into my oven which will accommodate the twenty-nine cookies this recipe makes with just one baking cycle.

In a food processor, (Mine has a 11-cup capacity which works perfectly), place the following ingredients and pulse 2-3 times for 15 seconds each, until the dates are in very small pieces and the bananas are smooth:

1 Tbsp. lemon juice or juice from ½ lemon

3 large, ripe bananas broken into chunks

7 medium-sized pitted dates /or/ 5 large Medjool dates, soaked in warm water for 15 minutes and drained

2 Tbsp. ghee /or/ palm shortening

1 cup unsweetened applesauce (two of those individual serving applesauce cups)

Pour this mixture into a mixing bowl containing the following ingredients that have been whisked together:

½ cup hazelnut flour

½ cup almond flour

¼ cup coconut flour

¼ cup ground flax seed

¼ cup hemp seed hearts

¼ cup Great Lakes gelatin

3 tsp. Ceylon cinnamon

2 tsp baking soda

1 cup unsweetened coconut flakes

½ cup dried fruit of choice (I use blueberries)

Add 2 tsp. of vanilla to mixture as you combine the wet and dry ingredients with a spoon or stirring spatula. The resulting dough should be soft but not sticky. If it seems too soft, add more coconut flour at 1 Tbsp. at a time, stirring after each addition.

Using a golf ball-sized cookie scoop – mine measures just a bit less than 2 inches in diameter – scoop out dough and place cookies onto parchment paper-covered baking sheets.

Breakfast Cookies

Dampen your first two fingers in water and gently press each cookie down a bit. Cookies do not spread out much.

Bake in preheated oven (350; 325 if convection) for 20-25 minutes. My convection oven usually takes 23 minutes. Cookies will still be a little bit soft but not mushy when done. Place cookies on a cooling rack where they will firm up.

A couple of these with your favorite breakfast brew will do the trick. Just warm them up a bit in a toaster oven while your coffee or tea brews.

Chilly November Night’s Butternut Squash Soup!

If you buy a butternut squash every year thinking you’ll dbutternut-squash1o something creative with it but don’t…. If that lowly butternut squash just sits on your counter promising to be nothing more than an object you might want to grab in self-defense during a home invasion… Then stay tuned for some great news!

Good. Better. Best. Never let it rest until good is better, and better is best!

Plain butternut squash soup is… good.

Add caramelized onions and garlic to get something… better.

79583a8c-8bb5-44cd-bde5-718df55d33d2Add anti-inflammatory spices, creamy good-fat from coconut milk, and bone building gelatin, and you’ll have the best steamy bowlful of butternut squash goodness you’ve ever had! It’s the BEST!

Let’s get right to the recipe. This is so easy to do and was a lot less of a mess to do using my immersion blender! Wow! First time using it for creamed soups – no more transfers to the blender and then to another soup pot.

Easy-peasy!

The day before, I sliced a butternut squash lengthwise, scooped out 2e42de54-6751-414e-a47c-443a8c118e3cthe seeds, and put the cut sides down on to a rack in a baking dish with about ½ inch of water in the bottom. I baked the two halves at 350 degrees until tender enough to easily poke with a cooking fork into the thicker neck section of the squash – about 50 minutes. When cooled enough to handle, I scooped out the flesh and stored it in a container overnight.

Armed with plenty of cooked squash, putting this soup together the next day was a smooth process. Pun intended.

Simply follow the recipe below:

GOOD – BETTER – BEST BUTTERNUT SQUASH SOUP

Into a large soup pot on medium heat add:

  • 1 yellow onion, chopped*
  • ½ BULB of garlic (that’s about 5-6 cloves), peeled, smashed, and chopped*47f1a1b0-bda5-4000-ae72-43b90f36c9b0
  • Extra Virgin olive oil to cover the bottom of a soup pot
  • A dollop of grass fed butter for an extra yummy factor (about a Tablespoon or so)

Slowly sauté veggies until clear. Reduce heat and add a tablespoon or two of water to continue cooking to caramelize veggies. This may take 7-10 minutes.

Add the following seasonings and ingredients:

  • 2 teaspoons of curry
  • 1 tablespoon of turmeric
  • Salt to taste
  • Pepper to taste
  • ½ can full fat coconut milk (if the cream is solid, scoop out about half to use and pour about half of the clear fluid into soup pot)
  • ¼ cup of Great Lakes unflavored gelatin, evenly sprinkled over the top of the ingredients
  • 1 – 8 ounce free range chicken broth with about ½ cup of water to rinse out containerimg_3024
  • Flesh of one baked butternut squash

This is where the fun started for me. Using my trusty immersion blender, I simply blitzed the cooked soup ingredients into creamy wonderfulness. No more using a dripping ladle to fill a blender in small hot batches to blitz, then pour into ANOTHER soup pot to finish. Yay! I can’t recommend my immersion blender enough!

Once the soup was piping hot there was nothing left to do but enjoy!

Food for Thought – The Anti-Inflammation Diet

We’ve all seen the headlines, “Local man loses 22 pounds in three weeks by not eating one kind of thing!”  My chiropractor was almost  giddy as she shared the news with me that one of her patients had lost 22 pounds in just three weeks by following her advice – and mine, too, by the way – by not eating just one kind of food. He wasn’t that interested in losing weight, he just wanted to feel better. Weight loss was just an added bonus. Do you want to “just feel better”?

When my readers do this, they notice improvements in how they feel within the first week. The added bonus? My chiropractor thinks that, in no way, was that fat loss. What was lost was inflammation.

Pus, perhaps? Ewwwww!

Certainly fluid. Inflammation goes hand-in-hand with fluid rushing to the site of the “igluten-free-foodsnjury.” What if that injury is body-wide? No wonder joints are swollen, hurt, and have limited range of motion.

So what did this man and my readers try? They cut out gluten.

I’ll never forget one of my Designed for Health students who pulled me aside to show how she was able to once again put on her rings. She didn’t have to tell me she had lost weight, her slender face and trimmer figure spoke for itself. Her painful, swollen joints were gone. Her Multiple Sclerosis symptoms were far diminished. Life was good!

She felt better!

The following excerpts from my book, Toolkit for Wellness, should help you understand the mechanics behind going gluten-free and why the benefits can be so far-reaching for you. These excerpts are regarding gluten only; the lectin and phytates parts have been omitted to save space.

Glutens, and Lectins, and Phytates, Oh My!

dark forestTo quote Judy Garland from The Wizard of Oz, “I don’t like this forest—it’s dark and creepy!” “Do you suppose we might meet any wild animals?” To which the Tin Man replies, “Mostly lions and tigers and bears!”

“Lion, and tigers, and bears, oh my!”

When you delve into the forest of so-called whole grain goodness, it’s a clear case of: “Glutens, and lectins, and phytates, oh my!”

While Judy and the gang became fast friends with the bashful lion, we are in no way friends with glutens, lectins, and phytates. Why? What are they anyway? ‘Johnson-Gluten-Graphic-2-1024x680

Well, going back to a better understanding how things work, let’s look at the nature of what we eat.

All living things work very hard to protect their own life. Animals run, jump, fly away, and if caught, claw, squirt toxins, sting, and bite to stay alive.

grainsWhat’s a plant going to do? Clearly not jump out of the ground and run!  Plants protect their precious seeds with coverings that are hard to penetrate, like nuts and their shells. Some fruits have noxious skin such as mangoes. Grains protect their seeds with toxic anti-nutrients: glutens, lectins, and phytates.

Briefly, gluten is a protein found in wheat, barley, and rye grains. Gluten, the lectins, and phytates found in other grains, can affect a couple factors in the integrity of the structure and proper functioning of the lining of the small intestine.

Remember Dr. O’Bryan’s analogy of the fuzzy, shag carpet structure of the small intestine lining? The shag carpet structuleakygutcureres need to be maintained for proper absorption of nutrients. They can become damaged, bent, crushed even, which renders them useless in nutrient absorption. To keep his carpet analogy going, in the presence of glutens, we now have Berber carpet.

If that’s not disastrous enough, the integrity of the junctions holding the individual cells of the small intestine lining together is compromised and the intestine becomes “leaky”—also known as intestinal permeability. This is where systemic inflammation and autoimmune issues start.

Inflammatory processes are good if we have cut our finger. Temporary inflammation helps witglutenh healing the cut; but body-wide, chronic inflammation leads to auto-immune issues and disease.

All humans produce a protein called zonulin when gluten is consumed. People with Celiac Disease produce way too much. The excess zonulin causes the junctions between the cells lining the small intestine to open up, allowing toxins, and clumps of gluten molecules to get through which are then absorbed into the blood stream.

Imagine molecules of protein escaping from being absorbed for use sickerand instead, are floating around and being seen as foreign invaders. Our bodies will naturally mount an immune response which is what starts the inflammatory process I have outlined previously. Where ever this immune response happens is where trouble happens, pick an organ, any organ; pick a body system, any body system.

Researchers are saying more and more, the bedrock of most all disease is auto-immune in nature. The gluten found in wheat, barley, and rye (and the lectins and phytates in other grains and nuts) are what serve as a launching pad for auto-immune and inflammatory diseases. This is why the signs and symptoms of any level of gluten sensitivity are so broad.

gluten2To summarize an article of Dr. Tom O’Bryan’s, “The Gut-Disease Connection,” from May 8, 2014, the first step in the development of autoimmune disease is leaky gut. In the event we can reverse the leaky gut, the possibility of shutting off the autoimmune response becomes real.

Is that dark, creepy forest of whole gain goodness looking even creepier yet? Can you connect these dots to the ills we see all around us?

Why are we becoming a nation of people who are obese, diabetic, weak boned, anemic, tired, and head-achy, with ADHD in our children, and victim to mounting auto-immune diseases and Alzheimer’s? Has our DNA broken down?

1% of us are allergic to gluten in a drastic way and symptoms of Celiac Disease, as it is called, can manifest fairly early in life. There are Celiacs who have no digestive issues; and there are non-Celiacs who are gluten intolerant with plenty of digestive issues. I have read recent articles stating there are some people on the gluten sensitivity spectrum who are only reactive to wheat. But sometimes it can take decades before the relenting damage reaches the threshold of causing life-altering disability. In fact, I want to share Bob’s story with you right now so you can appreciate what gluten overload, good stress, and bad stress can do to an adult body.

Bob’s Story:

After coming to America at age 17 from Asia, Bob enjoyed a totally American life, immersed in its culture, including the Standard American Diet. Fast forward to Bob at age 70, as he and his wife enjoy a summer trip to Germany and Austria. The good stress of a vacation in Europe is easily off-set by enjoying the cuisine-du-jour, which certainly includes fabulous German and Austrian pastries, breads, and bakery goodies three times a day. Ah! Very exciting times! Maybe not enough sleep, but plenty of pictures and good memories.

 Before they returned home that same month, Bob was experiencing symptoms of a cold, some diarrhea (traveler’s diarrhea?), and decreased appetite. Had Bob picked up some kind of virus? Okay, many travelers pick something up, nothing serious. By July, they were home; but Bob became very, very sick with nausea, vomiting, and diarrhea every day. Needless to say this trim man of 125 pounds was rapidly losing weight. The doctors ordered a host of tests, especially for cancer; but they all came back clear. One doctor called this “mysterious” and wondered if he had, indeed, picked up something exotic in Europe.

Add to this mix the stress of moving to another state to be closer to family, leaving behind fabulous friends and a strong church community. Needless to say, Bob got worse. By March the following mysterious illnessyear, Bob and his doctors were convinced he was going to die. He was down to 79 pounds. In a last ditch effort, his test results were forwarded to Massachusetts’ General Hospital for further analysis.

Finally an answer was coming!

Bob had become so allergic to gluten, he was “one notch away” from being a person with full blown Celiac Disease. He had become gluten intolerant. It took eight months to finally get a diagnosis. Eight months of suffering.

 Four months later, still on a gluten-free diet, Bob is now back up to 112 pounds and feeling better each day. It took a couple weeks for him to see any changes for the better, but improvements are happening all along as his body heals.

None of us are immune to the onslaught of forces that create some degree of gluten sensitivity.

Nearly 30% of us are non-Celiac, but test positive for antibodies that indicate the body is at war with itself in some way or the other when gluten is ingested.

In all of my readings, I have never heard of a single person who has not felt better after they stopped eating all forms of gluten. They felt better, they often lost weight, their brains were clearer thinking, their aches and pains lessened, their arthritis improved, their energy levels improved, and their bellies were happy. Truly the list goes on and on.

But your grandma lived to be 102 and she ate bread all of the time? Well, Grandma’s wheat was not the wheat we are eating today. The dwarf wheat grown now is especially high in gluten.

What is one to do? Give gluten-free a real try for 30-60 days; and if  your symptoms improve, great! If you improve somewhat, but still have some level of dis-ease, then expand your eliminations to include all grains (rice, corn, oats, etc.). Once you are normalized, try reintroducing non-wheat grains, one at a time, and note your body’s response. Everyone is unique. Maybe you can eat a bowl of oatmeal or a serving of rice.

Take Away Thoughts:

• Aside from adding to a starchy carbohydrate-laden diet, which causes great swings in blood sugar levels and promotes fat storage, grain consumption presents other problems that contribute to destruction of the small intestine lining and can lead to systemic and chronic inflammation.

Take Away Actions:

• Give healing a chance! For just thirty days, eliminate all gluten and just see how improved you feel. I predict you will start feeling better after just 7 days.

No one should EVER go into a doctor’s office without some kind of education about health; and especially, how different diseases can be treated by alternative methods. If getting educated about self-care is something new for you, Irene’s book is a great start!

From my own experience with a daughter who was an undiagnosed celiac for a decade, I knew immediately from reading about the author’s daughter what the problem was. Anytime you can learn something new about non-celiac gluten sensitivity, it’s a great thing; and I encourage potential readers to learn from this easy-to-read resource!

Irene follows many different patients as they bounce around the medical system looking for answers when the answers were in plain sight. Just look at the table of contents which covers most of today’s prevalent conditions and buy this book immediately! Really, I just kept nodding my head in agreement as I read case-after-case; and how in each one, a treatment was found – often from outside of the mainstream medical community – and patients’ lives were changed for the better.

Free Affirmations Flash Cards!

As a National Board Certified Teacher, I was well acquainted with affirmationsflash cards. The students loved them. A flash card is the only way to learn facts, in my opinion. I have also used them to benefit my meditative time. Positive messages, or affirmations, are also a hot topic for: stress reduction, calming down before bed to get better sleep, mindfully starting the day, and putting your consciousness and faith in the right place.

These flash cards are near and dear to my heart. They came about as a result of reading Dr. Norman Vincent Peale’s book, The Power of Positive Thinking. His up-lifting Bible quotes and affirmations that he penned or quoted from others so moved me that I wrote them down on pretty square sheets of paper.

Around the time of my retirement in 2012, I felt a need to shore my spirit up with affirmations that would sustain me through a waiting period before some much needed major surgery. Contrary to what I thought, I was not going to just ‘have my usual care-free summer’ then have my surgery in late August. No. My physical activity ground to a near halt. My spirit wanted me to hustle around walking along the beach, straightening up the house in anticipation of a post-surgical healing period, and tucking away teaching mementos.

Nope.

It seems that patience is a life lesson that I keep having to work on. It’s a recurring personal theme. Anyway, to get myself in the right frame of mind, going through these affirmations waaffirmation2s pure gold. After using these precious squares of wisdom and calm on a daily basis, somehow they got shuffled off into a drawer.

Recently, a friend of mine was facing some major surgery herself, and was a bit tearful about the whole thing. This had been something she had vowed she did not want to do, but do she must. When trying to console her and give her my prayers for peace and a successful outcome, I remembered these gems. How I wished I could have handed them to her!

I had needed my surgery badly, too, and was happily anticipating the day of its arrival. After a recovery period of several months, I was going to be and feel so much better. When waking up from the anesthetic, the first thing I said was, “I’m so happy!” I was so happy for the waiting to be over and so happy to start my recovery, but still in need of my affirmations! Recovery can be maddeningly slow.

There is that lesson in patience, again. Without these little gems, I would have gone out of my mind before and/or after my surgery.
We do not need to be getting ready for surgery, though, to benefit from daily affirmations. They are a great way to start, finish, or revive during the day.

These affirmatioCosmetic-Surgery-recoveryns would be best printed by you on some pretty paper. Choose your favorite color or find a great floral print or gentle pattern that would not take away from the message on them. So, print your set; there are 8 pages. Each page has lines for you to cut them out. I do keep mine in a certain order because the flow of thought works well for me. You’ll notice there are some blanks on page 8 and a full blank page for 9 so you can add your own.

How to use your affirmations:

The whole idea behind putting these on ‘cards’ and not just printing them out as a list is to give us an opportunity to mindfully read and reflect on each one; taking time to consider, ponder, and apply its truth.I-believe

Many of these are Bible quotes that may appear to repeat, but the message is from a different source. Sometime we need repetition. The one about the ‘rough being a state of mind’ is in reference to golfing. When the ball lands in the rough, it is our mindset that controls how “doomed” we feel. It’s not being Pollyanna, it’s being optimistic and embracing a can-do spirit. Mindset is everything.

The Pumpkin Patch is Open!

Do you do a happy dance when all things pumpkin-flavored reappear PumpkinSpiceLattein the fall? It’s a short season, so I look for every way imaginable to ramp up pumpkin goodness. I have two pumpkin delights to share with you today. First, a pumpkin version of Bulletproof Coffee, and a pumpkin spice version of my Breakfast Cookie recipe.

My early morning solo-brew is either loose leaf green tea or Bulletproof Coffee. It’s a part of my Series of Good Things that starts most days:

Large glass of water after swishing out the cobwebs first thing each morning.

Water on face to open eyes – a real must to enjoy what follows.

Open all the curtains.

Plank_modified_opHead for my mat in the guest room to do full and half planks, full and half push-ups, and a slant. (All exercises are explained in my Toolkit for Wellness which is finished, but still needs formatting, subtitle, and a NEW book cover- more on that in a bit).

Make my way into the kitchen to preheat tea pot/French press pot and start heating water.

Do my step-to-jog-to-run-in-place exercise while the water is heating.

Brew either the coffee or the tea for 5 minutes.

Do squats and lifts with a kettle bell or arm exercises during brew time.

Pour and enjoy.

Bulletproof Coffee is special coffee made from mold-free coffee Pumpkin-3-Rbeans. I learned from Dave Asprey, who writes the Paleohacks newsletter and sell it, that most all coffees are polluted with mycotoxins that can adversely affect people. Think sinus congestion, headaches, and other ailments. Enter mold-free Bulletproof Coffee.

After the coffee is brewed, I add the healthy fat of 1-2 teaspoons of organic ghee and blitz it in my Vitamix. Ah-mazing!

Being it is pumpkin season, I have been adding a couple tablespoons of pumpkin puree, pumpkin pie spice, and -yes- a half teaspoon of sugar! This is truly a sensory delight! My own pumpkin spice latte right at home! Even GOOD for me!

What would go great with a Pumkin-spicepumpkin latte, but Pumpkin Breakfast Cookies? Below is the annotated recipe I have published before on this blog and am putting into my new book, Toolkit for Wellness. We are not interspersing pictures this time so you can see it all together.
Breakfast Cookies freeze well and are a staple to have around for a light meal (2 cookies) or a light snack (1 cookie).

This is like a sneak preview of what is in the recipe chapter of the book!

Breakfast Cookies

Adapted from a recipe by Danielle Walker

This is a large recipe that makes about 27 cookies using two large parchment covered cookie sheets. I use an 11-cup food processor to mix most of this, followed by a final stirring using a large bowl to incorporate the two batches of ingredients.

In a food processor, place the following ingredients and pulse 2-3 times for 15 seconds each. Pulse until dates are in very small pieces and bananas are smooth:

1 Tbsp. lemon juice

3 large, ripe bananas broken into chunksplenty-of-pumpkin`

7 medium-sized dates /or/ 5 large Medjool dates, soaked in warm water for 15 minutes and drained

2 Tbsp. ghee /or/ palm shortening

1 cup unsweetened applesauce /OR/ replace with pumpkin puree

Pour the majority of this mixture into a large bowl. Scraping is not needed. Then place the following ingredients into the processor bowl and pulse for 5-6 bursts until incorporated:

1 cup of hazelnut /or/ almond flour* – This time, I used 2/3 cup almond and 1/3 cup coconut flour

1/4 cup ground flax seed

1/4 cup hemp seed hearts

1/4 cup Great Pumpkin-Patties-RLakes gelatin

3 tsp. cinnamon /OR/ replace with pumpkin pie spice

2 tsp. vanilla extract

2 tsp. baking soda

Add the following to the nut flour mixture and pulse 3-4 bursts until incorporated:

1 cup unsweetened coconut flakes

1/2 cup dried fruit of choice usually a berry /OR/ golden raisins

Add contents of food processor to those in the large bowl and hand mix using a large wooden spoon or spatula until well-combined. The batter is a bit wet, but should hold its shape well. If it seems too wet, add some more nut flour.

Using a golf ball-sized cookie scoop, form dough and place onto parchment paper-covered cookie sheets.

Using damp fingers, gently press each on down a bit.

Bake at 350 degrees for 20-25 minutes. I used a convection oven, which automatically lowers the temp to 325 degrees. A regular oven may take a little less time at the higher setting. Cookies will still be a little bit soft but not mushy when done. Place cookies on a cooling rack where they will firm up.

A couple of these make an awesome breakfast, especially when Pumpkin-2-Rspread with almond butter alone or almond butter mixed with a tad of Justin’s Chocolate Hazelnut Butter. Justin’s version of Nutella has organic cane sugar as the third ingredient after hazelnuts and almonds and contains only 8 grams of sugar compared to the others 21 grams of sugar as the first ingredient!

* I have used various combinations of flours depending upon what I had in stock. Coconut flour will dry dough, so the amount of moistness will change depending on how much coconut flour you use.

I know everyone just loved the “blue cover” but deep down inside, I just knew it was not representing the larger message. A member of a Facebook Community I am in, not only gave me some pointers as an author, but also shared with me a concept cover based on what he had gotten from my book. Well, folks, he was spot on! So, off to a graphic artist I went and I am waiting to see how this turns out!

Just One (Good) Thing After Another!

My absolute favorite morning routine sets me up for greeting the food-talk-4-u-2new day with renewed and centered energies. Whenever possible, this is what sets me on a great path. I call this a “Series of Good Things.” We started talking about this in the fall series of Designed for Health classes, and with my deeper understanding of habits and habit formation, it is all coming together for me with positive results.
Let me share:

Rise and shine at the same time each day! In doing so, I am waking naturally a few minutes before my gentle phone alarm announces itself. With more consistent bedtimes, waking up is not so problematic. Sleeping in has robbed me of too many retirement mornings, and I regret it when I do. No. Getting up at a consistent time is my first good thing.

food-talk-4-u-3Drinking that first full cup of cold water right after swishing out the “cob webs” from my mouth is good thing number two. Start the day with the best “hydrater” of all: water.

If my husband is up, I will make the bed on my way to the closet to dress. Good thing number three. The bedroom is neat and I am already on a roll!

Moving into the kitchen, I pass the refrigerator first, so I grab my food-talk-4-u-4cold Bragg’s apple cider vinegar from the door, pour a tablespoon-full into a glass, add about 6 ounces of water, and chug. This is a personal experiment; many in my spring Designed for Health class are doing it for cholesterol benefits. My research has netted a zero on scientifically proven health benefits except for well-documented benefit of improved blood sugars. I am doing it to add acid to my stomach in hopes to improve some reflux issues. While we refer to acid reflux, often it can be a result of not enough acid in the stomach. We will see. No harm for sure, and – hey- that’s more water! Good thing number four.

Then, I have to start my day feeding my menagerie of birds and squirrels! Watching their antics off the back porch is our major amusement and delight. That’s number five.

food-talk-4-u-5Taking a few deep, mindful, meditative breaths while pausing to sit on the porch swing helps me calmly set myself up for a new day. “Thank you, God, for this new day; thank you, Lord, in every way for your blessings great and small; make me a blessing to others this day. Amen.” Six.

Then, while the coffee or tea is brewing, number seven is my favorite to check off because, not only do I enjoy doing this, but getting to it can be hard for me. Plank time! Starting with a child’s pose to stretch my lower back, I move forward to do my two minutes of planks: full body plank followed by a “restful” half-plank from the knees.

The rest of coffee brewing time is dedicated to slow motion squats, Plank_modified_opkitchen-counter slow motion push-ups, palms up arm circles, ballet-bar style toe points to the front, side, and back: very good for balance. That is number eight!

Bing, bing, bing! Coffee’s ready! That’s number nine!

So – exercise minimums are met, bed is made, water is drunk, nature is fed; well… it’s a series of good things!

food-talk-4-u-sugar-8To keep that good vibe, I make sure half of my breakfast plate is veggies! Leftovers work great as a side to my two eggs or they can be scrambled together as a frittata. If all else fails, after frying the bacon and before cooking the eggs, I will grab a giant handful of greens to sauté with a bit of good oil (coconut, avocado, or olive). That’s number ten!

I hope that you, too, have a “series of good things” you are doing for yourself each day. Please share them with me!

To summarize some good things we have covered here and in class about improving our over-all wellness:

1. Mindful breathingBeautiful girl breathing and smiling on the beach with the sea and blue sky in the background

2. Gratitude each day

3. Drink some extra water

4. Taper-off and eliminate added sugars

5. Eat real food. Eat food without labels!

6. Half of your plate each meal should be (mostly green) veggies

7. Use good fats- butter and ghee from pastured cows, coconut oil, olive oil, avocado oil

8. Supplements should include Vitamin-D, omega-3 fatty acids, probiotics, and magnesium with your calcium

9. Toss the grains- they cause inflammation seen and unseen, and work against vitamin and mineral absorption

10. You may also want to toss the legumes: dried beans and peanuts- because they can have an adverse effect on digestion, can block absorption of vitamins and minerals, and can be inflammatory

11. Keep a regular bedtime and get enough sleep

12. Move and stretch your body every day. I have just started weekly Yin Yoga classes and am just loving it! More restful sleep; greater inner awareness and calm; and a more balanced feeling.

13. Set tiny, repeatable “tweaks” to move yourself toward better wellness.

14. Simplify, simplify, simplify!

15. Rather than getting more “stuff,” gather experiences in your life!

As I concentrate on finalizing my book, preparing single day seminars, and simplifying my own possessions by cleaning and tossing out, I will be taking a bit of a blogging sabbatical. There may be the occasional summer recipe or thought, but I am going to practice what I preach by simplifying and daily application of things that make our ultimate goals come true!

Note to Self – Just Don’t…

Congratulations, self! You decided to break away from sugar as the food-talk-4-u-sugar-1one good thing you were going to do. A little tough at first, perhaps. No Pop Tart for breakfast. No mid-afternoon cookie break. Cake for dessert? Nope. No added sugar this week!

And you did it! Funny how, after the first three days, the yearning for sweet stopped! It felt so good, too! Those knee joints didn’t hurt so much. There was enough energy all day long! That mandatory afternoon nap wasn’t even needed or missed! I could just sit down and relax while reading a book and not fall asleep mid-sentence.

Why, then, oh why, did I thifood-talk-4-u-sugar-7nk I could reward myself with a sweet dessert? Why? Why would I want to break the “spell” of being FREE from sugar? And not just as a habit! Why, oh why, did I think that one dessert would not have an effect on me?

Immediately, I felt physically weighted down.

This is how it was for one of our Designed for Health class participants last week. Great progress in sugar habit modification, and an even greater personal example to her about the power of sugar.

Not only does sugar contribute to blood sugar and hormone imbalances, but it is addicting to the extreme, contributes to body-wide inflammation, disrupts thyroid balances, provides fuel for cancer tumors, and generally mucks things up.

Note to self…once off sugar, stay off!

Another case, this time with yours truly—who should know better – I know, I know… We obese-factor-75were eating lunch at our favorite destination, Carolina Bagel. Passing on the bagels is not even hard; I just do not do gluten, but I am not Celiac. I forgot to ask to have the croutons left off the salad. I had no trouble removing them from my plate, but…oh, there were a couple left and they are seasoned so well…
What’s a few measly (delicious) croutons? Was I going to be above any reaction at all? No.

Just 30 minutes later there was a knot in my gut for a while; and why did that nameless malaise suddenly appear?food-talk-4-u-sugar-4

Note to self…listen to your body and do not eat the gluten. Ever!
Those were the things I noticed right off; but what was happening on levels I could not immediately appreciate?

We all may think we can be above it all, be the exception, but “no.”
Don’t beat yourself up for temporarily not thinking…although, not thinking is a choice, too…. But okay, you may goof. Just pick yourself up, dust off, appreciate that your body ALWAYS tells you the truth, and recommit to listening better and thinking smart.
